In addition, it adds chewiness to cookies and is also used as a thickener in pies, soups, and sauces. Tapioca has a reputation as being gentle on the stomach and easy to digest. It can also be used to replace corn starch. Use 2 Tbsp tapioca flour for each 1 Tbsp corn starch.
