Organic polenta or better known as cornmeal is gluten-free. The American Indian word for corn is “Maize” which means “that which sustains life”. Corn is right behind wheat and rice as the most important grain in the world. Polenta is a dish originated in northern Italy.

- Preparation- Mix together cornmeal, water, and salt in a medium saucepan. Cook over medium heat, stirring frequently, until mixture thickens, about 5 to 7 minutes ( add sour cream, cream cheese or yogurt on top)
