Organic red lentils or the lentil (Lens culinaris) is an edible pulse. It is a bushy annual plant of the legume family, known for its lens-shaped seeds. They are classified as grains or legumes.
Nutritional Profile: a 1-cup serving of cooked red lentils contains 230 calories, no saturated fat, has equal amounts of carbs and protein considering that half of the carbs are fiber. Lentils are an excellent source of molybdenum and folate. They also contain dietary fiber, copper, phosphorus, folate, manganese, iron, protein, vitamin B1, pantothenic acid, zinc, potassium, selenium, and vitamin B6.
