My grandmother used to bake the best razljevusa, a Bosnian traditional meal, I have ever tried. Back in days, it was made with potatoes but I will replace that ingredient with zucchini. Potatoes were something she had grown in her garden so she did not have to go to the store or farmer’s market to buy them. Please note that I like my razljevusa with a thin crust. Depending on the thickness different pan sizes could be used. This is a very easy dish to make.
- 1 Medium size zucchini
- 3 Tbspns Organic all purpose flour ( spelt flour, oat flour, and any other kind would work out as well)
- 3 Tbspns Organic corn flour ( or corn grits)
- 2 eggs
- 1 cup of sour cream or plain yogurt
- 1 tsp of salt
- 2 tsp of baking powder
You can replace sour cream with feta cheese or any other cream cheese, but in that case, you should add 1-2 Tbspns of olive oil. Also note that zucchini can be substituted with spinach, potatoes, sun-dried tomatoes, kale or even leek.
In a bowl grate peeled zucchini, and leave it on a side. Using separate dish combine flour, baking powder, salt, eggs, and sour cream. At the end add the grated zucchini to the flour mixture and mix until all ingredients are well combined. Using the round or any kind of pan you have at your disposal, place the parchment paper on the bottom and simply pour in the mixture. I have used 26cm wide round pan but if you want the thicker version you can use a smaller dish or even bigger one by doubling the ingredients. If you do decide to use a smaller pan, note that cooking time will be longer. Baking time is approximately 30 minutes on 200 degrees.
